Garlic & Za'atar Popcorn

The smell of homemade popcorn has a nostalgic comfort to it. Here, we use garlic oil for the base but you can use whatever you have on hand - ghee or coconut oil are great. Same goes with the spices. We call for Za'atar here which is a Mediterranean spice blend we use frequently in our dishes. It’s sold at most grocers, even Trader Joes now, but if you can’t find it any unsalted or low-sodium spice blend will work here. Italian seasoning, even a grilling blend will work!
You can either purchase a garlic oil (at most grocers or even Williams and Sonoma), or you can make your own garlic confit and keep a jar in the fridge for weeks. I love this recipe from Andy Baraghani at Bon Appetit. Just use the oil from that here!
