Fall Tacos w/ Jalapeno Cashew Crema

Delicata is a favorite around here because it roasts quickly, is earthy but sweet, and hearty for the colder months. We have made dozens of taco variations on SKCC, but this is an easy, veg friendly option that is super versatile. Make this into a taco bowl with brown rice and greens, add ground turkey cooked with taco seasoning and a little tomato sauce, or chop the veg into smaller bits and serve over nachos.

If you are a Trader Joes shopper, the cruciferous crunch is a blend of kale, cabbage and shaved brussels and adds nice color here! Some shaved cabbage, kale, whatever crunchy crispy greens you like will work!
