
Delicata & Hearty Greens Salad w/ Crispy Chickpeas

I saw this salad recipe in an IG video and loved the idea of smashing up the beans a bit so there are more craggy edges to get crispy! Brilliant. The beans add a little protein, heft AND texture. I did use an air fryer to crisp the beans, but a regular oven on convection setting and an occasional stir will do the trick. Because there were a few oven pieces in motion, this ended up being a cold/room temperature salad. If you want it to be fully warm, simply add the chopped kale and cabbage, with a little more oi, to the squash in the last 5 minutes to wilt and warm through.
*Stripey peeled is when you peel every other strip of a vegetable’s skin. It leaves some structure intact, while leaving things a bit more tender than they would be with the entire peel left on.
