This was a stand-out recipe from my friend Ashley Rodriguez’s book Date Night In. She calls for roasting tomatillos, which may be tough to find this time of year, depending where you live. If you cannot find them, you can use a jar of green salsa in their place. I would still char the garlic, onion, jalapeno so you get some fresh flavor in there with a prepared salsa.
