These are time intensive, but a special meal! If you can work ahead, do it, as chilling the broth to remove all the excess fat is important. Otherwise, they can taste super gristly and fatty. That said, the quality of meat is important here. Seek out a butcher or if you are a Costco person, they usually have the special meat guy there on weekends this time of year.
I know there are a number of you who don’t care for tahini, and it is not imperative in the mash by any means. Just know that it’s subtle, as there is a lot going on.
