Pineapple Fried Rice

We want day old rice for this, so it doesn’t introduce a bunch of moisture to the situation. You can also cook the rice in advance and spread it on a dish towel to completely dry out.
This is simple and sweet and not super spicy so it is kid friendly!
We keep this vegetarian, but you can also add ground pork or chicken to the first sauté to add an animal protein. A basic tamari roasted tofu will also work. To my cilantro haters, you can use Thai basil!
