PB&J Chocolate Cups

If you need an early Valentine’s Day treat, make these over the weekend and keep them in the freezer all week long.

We made these in mini muffin cups, but also tested in silicone heart molds and they worked out beautifully. You can also adapt the filling to whatever your family likes. We tested with strawberry jam and the crunchy chia and flax peanut butter from Trader Joe’s but the possibilities are endless.

To make them lunchbox approved, use sunflower seed butter and skip the nuts on top. You could do chocolate hazelnut spread and cherry preserves, walnut butter and fig jam, or coconut butter mixed with a splash of peppermint extract and a few spoonfuls of honey to do a play on a peppermint patty.

These are best kept in the fridge or freezer but would do fine in a lunchbox for a day.
