One Pan Enchilada Skillet

One pan. Thirty minutes. Super riffable. This is an easy crowd-pleaser that can be doctored up with some avo, tortilla chips, lime wedges, or even rolled into tortillas to make burritos. I added shredded cabbage into mine for extra veggies which worked great if you have some to use up. I know we've done a lot of Tex-Mex recently but that's where I go when my brain is toasted and such is life right now.
We've made it with ground chicken and beef, but any ground meat will work. Use what you like. Want it to be heartier? Sub the cauli rice for cooked white or brown rice. Vegetarian? Sauté 1 lb. mushrooms in place of the meat and add them at the very end to keep them from getting soggy.
