Oaty Pancake Mix

I made a jar of this pancake mix for a recent trip and am now planning to keep it stocked so we can make fiber-filled pancakes even more quickly in the morning. Homeschool has started and we need to be Zoom-ready by 8am so I’m trying to turn my old tricks of quick breakfasts.

We’re making a dry mix that can be scaled up or down based on your needs and family size. The yield below gets our family through two mornings, so I blend up half of the wet mixture, and add 1 heaping cup of the dry mix.

In an effort to always pack more fiber in, I am using some oats and flaxmeal or bran in the mix. You can buy these in bulk bins at health food stores if you don't want to own the bag.

If you need them to be gluten free, sub in Cup 4 Cup or Bob’s Red Mill Gluten Free flour for the all-purpose flour. Egg free? Replace the eggs with an over-ripe mashed banana. Dairy-Free? Replace the buttermilk with nutmilk and a squeeze of lemon juice or a runny, dairy-free yogurt and a splash of water. These can work for anyone!
