I was recently reminded of Nutter Butter cookies when they were requested as a road trip snack. Two, shortbread style peanut butter cookies sandwiching a creamy, peanut butter filling. I set out to use up the extras and this idea was born. A slightly healthier and more filling take on the original.

Here, you use store bought, crunchy PB cookies (or PB sandwich cookies) and mix them with peanut butter, a little coconut oil, maple syrup, flax seeds and almond flour for a base. It’s part power ball, part dessert.

Not into white chocolate? Use dark chocolate. Allergic to peanuts? Sub for almonds, almond butter, and a chocolate sandwich cookie.

You need a crispy cookie for the base. For gluten free, Simple Mills’ Creamy Peanut Butter Stuffed Sandwich Cookies are a great option.
