Mushroom Miso Burgers

This yields 4 patties, fit for English muffins as buns. Smash them a bit thinner to fit on a standard bun. These are on the more delicate side than our Sweet Potato Black Bean Burgers, as the potato there acts as a binder. If you eat eggs, pulsing one or two into the mixture here will help them hold better.
We added super simple toppings of avocado and greens and mayo and mustard. You could use our Green Goddess sauce or the Charred Scallion Yogurt Sauce would be good here as well!
You may consider doubling this recipe, as the patties are easy to reheat and throw on top of a salad for lunch and my kids loved them.
