I wrote this recipe for Bon Appétit last year and it was a hit - it has lots of great reviews on their site and is endlessly riffable. Some have mentioned putting vanilla protein powder in there for added protein or eliminating the egg if needed, without any problem.
I like my oatmeal tender, but if you let this sit, it firms up and you can tell your kids its like a carrot cake. There are sweet bits of apple and date and likeable carrots that feel like there is more to a bowl of oats.
