So many of you pointed me toward your favorite meatloaf recipes, and I think I learned something from each one. We are going to pack this meatloaf with a super minced mirepoix mixture to keep it moist, be generous with the glaze, and make the loaves small so they cook faster. I will also do an Asian turkey version in a few more weeks because apparently there is a whole world of meatloaves, and we definitely need one of each.

A shortcut for the veggie chopping would be to pulse everything in a food processor until you get small bits. I would highly suggest this.
