Masa Crepes w/ Beans & Greens

Sort of like a quesadilla, but bougie...and a few more steps ;)
Masa Harina, most popularly used for homemade tortillas, is a unique crepe addition - making them feel summery and fresh.
This makes enough for 2 crepes per person, plus a few leftovers. You can reduce it by a third or ⅔ for less crepes. Batter will be fine in the fridge overnight if you want to use leftovers to serve with eggs or berry jam the next day.
We did a quick sauté to fill, and like all things enchilada or tortilla soup etc., adorn as you wish.
