Loaded Grilled Veggie Nachos

These are such a fun twist on dinner for a Friday or for a weekend hang with a group of friends. These are a pretty low-lift with lots of flavor and you could add the carnitas or some grilled flank steak if you wanted meat.
Taco seasoning can often be super salty. You can make your own (here) or buy one in the store. I like the one from Thrive, Siete Foods, or those from Frontier co-op.
Veggies can be swapped with whatever you have on hand. Corn, tomatoes, mushrooms, zucchini - all work here. Just know they will cook at different times. If you prefer not to grill, they can be chopped and roasted at 450°.
