Double the batch and freeze them (after baking) because they come in handy when you need a quick dinner on the table. My kids like them plain with the pesto, you could also warm them in red sauce and throw them in a toasted bun for a meatball sub situation, or over noodles or zucchini noodles can help fill out the meal.
