
Kung Pao Brussels & Fried Rice

This week we tried to recreate some of our takeout favorites and make them work for weeknight cooking. If you have a small window to chop vegetables, it will make quicker work of dinner.
Since you have to work quickly with fried rice, make sure you have everything chopped and ready to go once you’re ready to cook. It’ll make the process much smoother.
A note on coconut aminos: we use this sauce in place of soy sauce or tamari for those with gluten/soy allergies. If you use tamari, mix it with a teaspoon of honey before adding to the rice to give the dish its signature touch of sweetness. This will also help things get brown and crispy.
If your family doesn’t do brussels, the same amount of broccoli florets, or green beans would work in their place. The Kung Pao Sauce can also work on chicken breasts/thighs, salmon, etc.
