I love this salad! I know there are a group of us who are loving the heartier salads that can be easily packed for lunch the next day, and this is one of them! If you are looking for more protein, add some shredded rotisserie chicken or cooked lentils.

Delicata is an easy squash to prepare because the skin is edible, so you don't have to peel it, and it’s thinner skinned than other winter squash, so it’s easier to cut as well. They are a fall vegetable, so may be out of stores soon. Go stock up! You can keep them at room temp for a few weeks. That said, roasted butternut squash would be great too.
