Jamie’s Chicken in Milk w/ Roasted Carrots

I was planning to incorporate some easy sides, but didn’t feel like I could just post a side without a main. So, we’ll plan for one of the internet’s most famous chicken recipes.
Jamie Oliver has got to be one of the most charming, likable tv chefs. I took his Chicken in Milk recipe, and used skin-on, bone-in chicken thighs so that it cooked a bit faster. Reference the recipe should you want to use a whole chicken.
Both the chicken and carrots need oven space. The carrots can roast on their covered sheet at the same heat that the chicken is braising. When you pull the chicken to rest, uncover the carrots and do an open, high heat roast so they can get a bit of color. This also allows the chicken time to rest. Don’t worry, it will stay plenty warm.
