A quick lunch salad for you! If we were having this for dinner, I would add some croutons or garlic bread. It can truly take any veggies you need to clear out!

I am usually all about grilled chicken for ease, but we love these little nugs seared in a hot skillet. They glaze themselves in the marinade. This would be a great lunch option as that chicken can be made in advance, and easily doubled so you can throw salads together.
