Even in the later months of summer, we like to lean on the grill to do some of the work. Here, we’ll roast and grill to make quick work of both cook times. We’ll also use the dressing as a marinade. If you’re not a fan of chicken thighs, sub in chicken breast pounded to a ½-inch thickness, or even an extra-firm tofu.
This is best with an overnight marinade! Marinate your chicken the day before if possible.
