Ham & Cheese Croissant Bites

Okay, these were a little tough to shoot a photo of, but they are tasty! Eggcups are popular for the ability to take them on the go but can be a harder sell for picky eaters. This recipe takes the flavors of a classic ham and cheese croissant, and throws it together with eggs to make mini, handheld frittatas with crispy edges.

If you have a silicon muffin tin, this is the perfect use because eggs are very tricky to remove from metal (I don’t have this one with built in support but I’m intrigued!) Just make sure to put the tin on a baking sheet before transferring to the oven to avoid spilling. Or, if you don’t want to fuss with muffins, you can bake this in a 9x9” baking dish. The cooking time should be roughly the same.
