Halibut Tostadas

Halibut Tostadas

Makes
8 tostadas
Total time

Seafood is tricky for my kids (outside of shrimp for Curran, and maybe a little bit of salmon) so I just leaned in to what us adults wanted to eat, and I love citrus with fish. That said, these are pretty favorable flavors for any seafood, so some salmon or shrimp would also work here in place of halibut, which may start to be tricky to find at this point in the season. I could see this being an appetizer; perhaps make your tostadas out of those “street taco” sized tortillas. Because there isn’t much fussing with the fish, this one comes together so quickly! I find “micro cilantro” near the sprouts at my markets, typically near the herbs, and you can usually find some at a farmers market as well. Regular ol’ cilantro is fine too! The micro is just smaller and cute.

I didn’t want to break the tostadas, but the avocado would have been nice sort of smushed onto the bottom of things and maybe would have helped prevent the toppings from falling off.
