I’m obsessed. I LOVE a well-balanced, filling, entrée salad and this is perfection. I got the idea from a Canadian cookbook called Mandy’s Gourmet Salads, which I would highly recommend. New to me, but she’s well known in that area, and the salad ratios are dreamy. I have only tried this salad so far, but the book is great!
My kids, however, don’t love an entrée salad, but they’ll eat pieces from this a la cart. This makes a decent size salad, could feed 4 not-super-hungry-adults. If you’re only feeding two, pack up some of the components, undressed, for lunch the next day.
