Grilled Italian Sausages w/ Green Aioli & Sweet Potato Fries

A charred Italian sausage over greens with a bright dipping sauce and sweet potato fries makes for a quick, crowd-pleasing dinner.

We use the green-sauce base in the white bean burgers, too, so you will have plenty extra. I suggest making this on a Sunday and having it ready for the week.

There are two steps I note here that might not be critical but do yield a better end result. The first is “parboiling” your sausage before grilling. This allows them to be fully cooked through before the outsides burn on the grill. That said, if you buy the precooked chicken sausages, like Seemores or the ones from TJ’s, this step is NOT needed. Second, I suggest you soak your fries before roasting to get extra crisp. Critical? No? Does the crunch increase? Yes.
