Granola Bars

Makes 12 bars

SKCC

I am giving yields here and passing along some flexibility. Mine are cherry chocolate chip, but you could also sub in dried apricots and maybe extra walnuts or rice crisp cereal. The important ratio here is the dry to wet mix. Because these are gluten, dairy and egg free, they can be delicate in nature. They do hold shape, but if left out or warm, the coconut oil gives up its holding power. You can find brown rice syrup online or at health food stores. Honey will work, I just find BRS holds a little better.

Mine turned a bit brown because I put the chocolate chips in while it was still warm and they melted a bit. Yours will be lighter in color! If you’ve purchased flax meal for other SKCC recipes and don’t know what else to do with it, you can sprinkle a little in here for more fiber.

These are dense! A small square will do the trick.
