A one-bowl cake is my favorite thing.
If you do not stock almond and rice flours, Bob’s Red Mill 1 to 1 Gluten Free blend is great. Alternatively, use 1 ¾ cups all purpose flour if you do not need/want it to be gluten free. The cranberries are a nice, tart punch, but blueberries are an easy substitute.
