Apple Cinnamon Muffins

Inspired by the apple cider donuts you can get at the pumpkin patches this time of year. These are a little more healthful, naturally sweetened, and studded with granny smith apples. If you don’t have buckwheat flour on hand, it is a 1-1 swap with oat flour, or a 1-1 GF flour. Note that GF blends already include a starch, so you can just use ¼ cup more of the blend in place of the arrowroot if you don’t stock that. If you don’t need them gluten free, use 2 ¼ cups of all-purpose flour (no arrowroot needed!).
You can skip the turbinado sugar crackly top if you want these to be just sweetened by coconut sugar and maple. These are even better the next day toasted with a little butter and honey in the morning.
Please really beat your eggs! It’s essential to get the cute little domed tops.
