Gingered Butternut Squash & Lentil Soup

I am having a season of soups with coconut milk bases. Given that I am the one who is responsible for eating most of the food in our house, I am making what I like. This soup is like a curry, but brothier and I didn’t serve it over rice this time. I gifted someone going through a hard time a few jars of soup and this felt hearty and like a nice departure from chili.
