Garlic-Roasted Cauliflower Steaks w/ Mustardy Lentils & Cashew Romesco

We’re using the tried-and-true romesco here but replacing the almonds with 1/3 cup of raw cashews. Soaked cashews (a couple hours in water, then drained) are preferred, but unsoaked will do in a pinch.

Pesto, chimichurri, or your favorite sauce/spread could be used in place of the romesco.

Beluga lentils can be swapped with whatever lentil (or pulse) you have on hand. White beans or garbanzo beans could be lovely! If going the garbanzo route, I’d smash some of them and get them nice and crispy.
