Garlic Brussels Sprouts Pasta Bake

This was inspired by Half Baked Harvest’s stovetop mac method. I love it because there is no roux, so it feels less fussy and easy to make GF if needed. This is on the richer side. There is a lot of cheese. This could be a side dish, amidst a protein and a cheese-less green salad to balance things out. We are baking this in a 9” pan, but it could be doubled to make a 9x13 for a group.

This does match Brussels to pasta ratio 1:1 in the finished product, if you’d like more noodles, you can up the amount to 3/4 lb. without other changes.

Keep this in your back pocket for the holidays; it would be lovely for Thanksgiving.
