Frittata w/ Sausage & Tots

A meal that works as breakfast, lunch or dinner. You all love a one-dish meal and this is it! I use frozen sweet potato tots and get those going while I prepare the rest of the ingredients. You honestly could probs throw them in frozen and they’ll bake in the eggs, but I like that they have a little crisp this way.
Vegetarians, leave out the sausage with no other changes. If you still want that “meaty” addition, use 12 oz. sautéed mushrooms or a vegetarian based chorizo or “ground meat” substitute.
I served this with some lightly dressed greens and fresh bread to make a substantial meal of it.
