Feta Fried Eggs w/ Greens & Grains

Of the many viral food trends on social media, the feta fried eggs is one that I can actually get behind. This recipe calls for pre-cooked grains and prepared umami cashew sauce (If you don’t want to make your sauce, a packaged Bitchin Sauce or the new Almond Sauce at Trader Joes are great subs). You can make both in advance to make quick work of dinner. If curry isn’t your thing, there are many sauces in the archives that would be fab here!

It’s pretty critical that you have a good, non-stick pan for this or your eggs will stick and be a mess. If your non-stick is functional, the eggs should slip right out of the pan with a crispy, lacy bottom and runny yolks. If it’s scraped up, consider replacing it for health reasons and for function.
