Eggplant Mushroom 'Meatballs'

I keep an abundant collection of recipes from magazines that catch my eye, and while flipping through them recently to curate down the pile, I landed on this one. It is originally from Real Simple and I didn’t change much. They are coincidentally dairy, gluten and egg free which makes for a delicate yet light little nugget.
My kids would never go for mushrooms or eggplant on their own but went for a few of these. I ate them with greens and sauce but you could put them in a pita with some tzatziki, hummus, or tahini sauce to fill out a meal.
I suggest the Tahini Dressing sauce but search the archives for alternatives.
