Crispy Greek Wraps

Part spanakopita, part gyro, part flauta? Whatever it is, these are packed with flavor. We used flour tortillas here, but if you need a GF version, use cassava flour tortillas. Certain brands of corn tortillas may work, but they are more prone to breaking.
We did not include the dipping sauce in the ingredient list of directions, as I realize it’s a bit of prep and everyone is trying to keep meals easy. They have plenty of flavor on their own, but def consider adding the Muhummara (red pepper sauce) to This Week's menu if you want to go that extra mile.
Not traditional in any sense of the word, but these are a great summer dinner or pool snack since they’re handheld.
