Crispy Gnocchi w/ Tomatoes & Goat Cheese

There are nights for unique ingredients and time to really impact flavor, and then nights you need to feed people in under 30 minutes. Another meal to add to that tag we have here in the archives.

I used the Trader Joes frozen, cauliflower gnocchi here. The internet loves them, I find them a bit gummy, but my kids will eat them and they are gluten free. I would use two packages to feed 4 hungry people, so double the recipe below to scale up. *If you are using fresh or shelf stable gnocchi, you’ll want to boil them first. Cool, dry then proceed with the oil and crisping steps. NOTE! Timing can vary by air fryer. Ours took a good 10 minutes to get a crisp, my tester mentioned hers were plenty crisp in 7 minutes. I gave a range below, but just stand by and check them on the lower end of the range to be sure they don’t burn.

I love our Smart Oven with its air fryer option. An investment piece that needs counter space but if you are already a toaster oven person, this is a really nice upgrade.
