Creamy Boursin Chicken

Everyone loved this and it was so simple! I also cooked a half pound of short pasta and we served the chicken and sauce over that. If you’ve heard of the famous “marry me chicken”, it’s essentially that.

I typically use Better Than Bouillon for broth and it worked well here. I probably made it a bit more concentrated than what the package suggested.

They are not in the grocery list, but add some noodles, mashed potatoes or garlic bread to complete this meal. More steamed spinach could also be cooked to fill it out for a lower carb option. For more veggies, a simple green salad on the side would be great too!
