Compost Cookies

In other parts of the country these are called garbage cookies or cowboy cookies. On the west coast, we call them compost cookies. In other words, throw everything salty and sweet in the bowl and hope for the best.
We suggest 1 cup of “extras” for the dough. This can be a combo of crushed potato chips, pretzels, candy coated chocolates, toffee bits, chopped peanut butter cups, butterscotch chips, etc. If you still have Halloween candy lying around this is a good way to use them.
These are an adaptation of “The Perfect Ration Oatmeal Raisin Cookies” from Sara Copeland’s latest cookbook Every Day is Saturday. We suggest GF options, but you can use AP flour in its place!
In the recipe below we did ¼ cup raisins, ½ cup roughly chopped dark chocolate, and ¼ cup crushed pretzel sticks. Another combo we have had success with is ½ cup butterscotch chips, ¼ cup crushed potato chips, ¼ cup crushed pretzels.
One last note: You can swap 1 stick of butter for the coconut oil here. Coconut sugar is a 1-1 swap with light brown sugar.
