Coffee-Rubbed Salmon w/ Watermelon & Cucumber Salad

I know many of us are cooking outside these days, and this is a quick grilling menu. Add the garlic bread from week 100 or some baked potatoes to complete the meal!
With limited grocery runs these days, I’m leaving the protein up to you - steak, salmon, shrimp, chicken - all great. I assume about 5 oz. per person, which is a small serving, but does the trick if you’re wanting to work with larger pieces like flank steak. I assume for a slightly larger portion of fish, maybe 6 oz. per person, and if you’re making the vegetarian swap for mushroom caps, assume one per person. Like heat? A thinly shaved jalapeño to the salad is a great addition!
