What a great summer snack and lunch box option once we’re back to school! I have brought these to two kid’s sports games and you should see the kiddo side-eye I get for not bringing packaged snacks. One day they’ll appreciate it RIGHT?!

Brown rice syrup can be tricky to find. I have found it at Whole Foods and Sprouts, or wherever you have a larger variety of “health foodie” sorts of items. Honey does work! It’s just a bit stickier and the bars will be darker in color. *Muesli is a lighter version of granola, and if you don’t want to buy that, use 1 ½ cups oats + ½ cup shredded coconut + 1/2 cup chopped nuts + 1/3 cup chopped dried fruit.

These are more delicate than a store-bought bar. You’ll want a napkin to eat them, and if packed in a lunch box, consider plastic wrap, beeswax wrap, or pop them in the box frozen.

This makes a lot, a full 9x13 pan, so you can also halve the recipe and make it in an 8” square for a more reasonable number of bars. They can be wrapped individually and frozen for months.
