Chili Cauliflower Tacos

Easy peasy! My under-30 minute, no thinking kind of meals are always roasted or grilled things in tacos. While the veg or protein cooks, I make a good sauce, like the avocado pepita sauce or the restaurant salsa to make things more special. Ideally, I have pickled onions ready.
This can be tucked into enchiladas if you want to stuff some cheese into the tortillas with the cauli, beans and cabbage, and then smother it with sauce.
