Chicken Taco Soup

I suppose this is close-ish to our tortilla soup, but different. It is a great meal to deliver or make-ahead, and I know many of you are requesting those! It can be frozen in bags, for months, or gifted in a large glass jar with the fixings on the side. Vegetarians? Replace the chicken with ¼ cup of uncooked rice, bulgur or quinoa and another can of beans to fill out the soup. I've also added some diced sweet potato in with the bell pepper to fill it out. Swap vegetable broth for the chicken broth too.
