The only thing better than grilled chicken over a good salad is CRISPY chicken over a good salad.
If you’re worried about your chicken not being fully cooked through, I like to keep the oven on at 350° and place the browned chicken cutlets on a wire rack–fitted baking sheet while I cook the rest of the chicken. This ensures they’re cooked through and get extra crispy.
