These are a mix of the classic chipped cookies you likely grew up on, with a soft and chewy center and no butter browning.

We start with a basic cookie base and spice it with cardamom, almond extract, pistachios, and white chocolate. They’re somewhat of a kitchen sink cookie - meaning you could sub the nuts and chocolate for another variation depending on what you may have lying around from holiday baking.

These are lovely as is, but since they are soft and chewy, they would be really lovely in an ice-cream sandwich with pistachio ice cream nestled in between two cookies.
