I added more bits than should be included in a traditional Kitchari because I like to vegetable-ize wherever possible. Kitchari, an Ayurvedic dish, is traditionally composed of mung beans and rice and simmered together with some spices, resulting in a dish that is both comforting and easy to digest. It’s usually more of a thick stew vs. broth soup, but we’re going to take the basic idea and add extra veg.
These are all spices I stock, but if you’re short one, not a huge deal. Don’t let it stop you.
This feeds four moderately, but if you like leftovers or to freeze dishes like this for a later date, consider doubling the below. It tastes even better the following day!
