Butternut Salad w/ Cider Maple Dressing

We’re making this a meal salad with some different textures and adding some sweet and filling squash on top. I’m using butternut here, but if you want to save on prep time, replace it with two delicata squash and you can just eat the skin. You can also try out honeynut (which are like small baby butternuts) that are sweet and so tender. Trader Joes has them during a very short window so hop on them!
You may want to consider making extra squash - some for this, and then smush the rest into some enchiladas!
Dried cherries are large in a green salad, so I’ll use scissors to halve them. This step is up to you.
