My waffle maker is stored in the garage because we don’t use it often but when we do it’s always worth it. Most of the time it’s used for sleepovers, a rare slow Sunday, or maybe breakfast for dinner when produce is low.
These waffles are super easy to make dairy-free! The Follow your Heart brand makes a great sour cream substitute, and to make your own dairy-free buttermilk, simply add a tablespoon of lemon juice to non-dairy milk and let it sit for 10 minutes before moving forward.
Leftover waffles can be wrapped and stored in the fridge for up to two days and toasted to reheat. Waffle batter is thicker than pancake batter so if you want these to be the latter, add another 1/3 cup water or milk to thin out the batter.
