For this soup, I started with Deb Perelman’s recipe because it didn’t look like a gut bomb. I used a little less flour and cheese, and added a potato to help give the soup more viscosity. While great as is, I had some browned sausage on hand from a pizza night and everyone ended up adding that for protein. Not “traditional”, but a good carnivore addition!

I know not everyone is close to a Trader Joe’s, but their Unexpected Cheddar Cheese was great here. It’s a cheddar and parm blend and it has so much flavor.
