Broccoli & Cheddar Stuffed Potatoes

Potatoes and broccoli are go-to produce items for my kids, so these were a hit. I called them a meal with some cut up fruit on the side, but you could add whatever grilled protein you fancy to fill it out.
I am calling for four potatoes if this is your meal, but if it’s a side, or for a child, half a potato usually does the trick. The leftovers save well, so I would assemble them, then bake any extras off later in the week.
