Blueberry Bran Muffins

Blueberry Bran Muffins

I went to three markets before ordering the wheat bran online. I was surprised even Sprouts didn’t sell it. Note that wheat bran seems to be a Whole Foods or well stocked health food store option if you’re making your grocery list. I don’t love buying an ingredient for one thing but I will make these again and you can sprinkle bran into any pancake batter or smoothie to increase the fiber content. Eat them within a few days as all that fiber soaks up the moisture and they dry out easily.

Many traditional bran muffin recipes include molasses. You can swap in a few tablespoons of the brown sugar for molasses if you want a deeper flavor.

These muffins are not overly sweet on their own, so butter and/or jam at the end is a great addition.

I used dried blueberries; the muffins can take any dried fruit - raisins, cherries, etc.. Fresh berries would be fine and I’d assume it would be about 1 cup blueberries, or chopped strawberries, as the batter is already quite dense.
